TORTANG  CRAB



Ingredients
 alimango or alimasag (crabs)
eggs
onion
celery or green onions or both (or if you have kinchay, use kinchay)
salt
white pepper
garlic
extra garlic for frying
oil for deep frying
  This is how to do it: Boil crabs until red. Take meat out of crab including the "alige" if present. Save as much as much meat as you can. Make sure not to include 'bones' in the meat that you collect. Set meat aside and also save the shell.

Slice celery and onion. Set aside.

Whip eggs. As to the number of eggs, it depends on how much crab meat/vegetable mixture you have.

Mix crab meat, "alige", onion, celery or green onions (note: I like celery better in this dish, it gives it a little bit of flavor, kinchay or cilantro is also good to use here), a little bit of garlic, salt and pepper to taste - like making an omelet. Mixture has to have a consistency that the ingredients don't fall apart or run.

Stuff crab shell with the crab/egg/vegetable mixture.

Heat oil in pan (a wok works best here), add garlic. Once the garlic is brown, fry crab. You probably need to deep fry so heat a lot of oil. This is very quick actually. When the crab meat mixture turns brown, take the crab out of oil and drain (paper towel works best).  Kainan na!!!

Batchoy


1 tbsp oil
1 clove garlic, minced
1 medium onion, thinly sliced
1/2" ginger root cut into strips
1/2 cup diced cooked pork meat
1/2 cup diced pork liver
1/4 cup diced pork kidney
4 cups stock used for boiling meats
1 tbsp patis
1 tsp salt
1/8 tsp pepper
2 oz. misua or vermicelli or fine rice noodles (about 1 cup)
2 green onions, minced
 

How to do it:

 In a medium saucepan, heat oil, saute garlic, ginger and onions for two minutes. Add pork, liver and kindey, stir fry for 5 minutes.
Add meat stock and bring to a boil. Season with patis, salt, pepper. Lower heat, cover and simmer for 10 minutes.
Add misua, cook 1 minute, remove from heat. Garnish with green onions. Serve hot.

Oriental Lapu-lapu Ingredients: 3/4 kg lapu-lapu fillets, cut into cubes
2 tbsp flour
4 cloves garlic, crushed
100 g Baguio beans, sliced
1 pc medium red bell pepper, cut into strips
1-1/2 cups toge (monggo sprouts)
1 can (234 g)Fresh Cut Pineapple Tidbits, drained (reserve syrup)
1 tbsp flour, dissolved in remaining pineapple syrup

MARINADE

2 tbsp pineapple syrup
2 tbsp soy sauce
1/2 tsp iodized rock salt
1/4 tsp pepper
 How to do it: 1 MARINATE fish for 30 minutes. Coat with flour, then fry until golden brown. Set aside.


2 SAUTÉ garlic, Baguio beans and bell pepper in oil. Add 3/4 - 1 cup water, pineapple syrup, toge, salt, sugar and soy sauce to taste. Allow to simmer.


3 ADD the Fresh Cut Pineapple Tidbits and fish. Simmer once.



Serves 8
Rich in Vitamin B12 – prevents anemia.

Planked Tenderloin with Sauteed Mushrooms Ingredients: 1/2 kilo tenderloin beef, sliced 1/2 inch thick strips
2 tbsp. butter
salt, pepper, vetsin to taste
1/3 cup butter
1/4 cup red pepper, chopped
1/4 cup green peppers, chopped
1/4 cup onions, chopped
1 tbsp. parsley, chopped
4 cloves garlic, pounded
1 tbsp. calamansi juice
100 grams mushroom, sliced
2 tbsp. butter

MASHED POTATO:
1/4 kilo potatoes
2 tbsp. butter
1/4 cup evaporated milk
salt, pepper, vetsin to taste
 How to do it: 

Stir fry tenderloin beef in 2 tbsp. butter for 5 minutes. Season to taste. Set aside. Saute 1/3 cup butter, red and green pepper, onions, parsley, garlic and juice. Season to taste. Set aside. Stir fry mushrooms in 2 tbsp. butter for 3 minutes. Set aside.

Mashed Potatoes:
Boil potatoes until done. Peel and mashed fine. Add butter and milk. Mix very well and season to taste.

To Assemble:
Spread 1/2 of the vegetable mixture in a platter. Place sauteed beef on top of vegetables. Cover with rest of vegetables. Sprinkle sauteed mushrooms on top. Decorate rim of oval platter with mashed potatoes using pastry bag. Broil until potatoes are golden brown.
